Tony developed his own menu ideas and wrote out a recipe and an equipment list. He then prepared and cooked his starter and main course. His starter was crispy potato skins served with sour cream and chilli mayo. For his main, he cooked stir-fried chicken and pak choi with ginger garlic and sweet chilli. Miss Rogan said that Tony worked in a clean safe and tidy way and produced two dishes that were excellent and balanced for colour texture and flavour.
